High Protein, Gluten & Grain-Free Flatbread

Ingredients:

1/2 cup cottage cheese

2 large eggs

1 tbsp ground flaxseed or chia seed (optional for added texture)

Pinch of salt

Butter or olive oil (for cooking)

Instructions:

  1. Mix Ingredients:In a blender or bowl, whisk together the cottage cheese, eggs, ground flaxseed (if using), and salt until smooth.
  2. Heat Pan:Heat a nonstick skillet over medium heat and add a little butter or olive oil.
  3. Cook Flatbread:Pour a portion of the batter into the skillet and spread it into a round shape. Cook for 2-3 minutes on one side until the edges set.
  4. Flip:Flip the flatbread carefully and cook for another 2-3 minutes until lightly browned.
  5. Serve:Use immediately or store for later. This flatbread works great as a wrap or side.
