    Watermelon, Mint, and Feta Salad

    Ingredients:

    • 4 cups of watermelon, cubed
    • 1/4 cup fresh mint leaves, chopped
    • 1/2 cup crumbled feta cheese
    • 1 small red onion, thinly sliced (optional)
    • 2 tablespoons extra-virgin olive oil
    • 1 tablespoon balsamic vinegar or fresh lime or lemon juice
    • Salt and black pepper to taste

    Instructions:

    1. Prepare the Watermelon:

    • Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.

    2. Chop the Mint:

    • Rinse the fresh mint leaves and pat them dry. Chop the mint leaves finely and add them to the bowl with the watermelon.

    3. Add the Feta:

    • Sprinkle the crumbled feta cheese over the watermelon and mint.

    4. Optional Onion:

    • If using red onion, thinly slice it and add it to the bowl.

    5. Dress the Salad:

    • Drizzle the extra-virgin olive oil and balsamic vinegar (or lime or lemon juice) over the salad.
    • Gently toss the ingredients to combine them, being careful not to crush the watermelon cubes.

    6 .Season and Serve:

    • Add salt and black pepper to taste.
    • Serve immediately or chill in the refrigerator for about 15-20 minutes before serving to allow the flavors to meld.
