High Protein, Dairy Free, Breakfast Casserole with a little kick!

Ingredients:

  • 1 lb. 99% lean ground turkey
  • 1 diced Poblano Pepper
  • 1/2 cup diced onion
  • 2 cups spinach
  • 4 whole eggs + 8 egg whites
  • 1/4 cup shredded cheese (optional)
  • 1/2 cup unsweetened oat milk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Cook the ground turkey in a skillet over medium heat, seasoning with salt and pepper.
  3. Add the onion and poblano pepper, cooking until softened (about 5 minutes).
  4. Stir in the spinach until it wilts, then remove from heat.
  5. In a large bowl, whisk the eggs, egg whites, oat milk, garlic powder, and smoked paprika.
  6. Combine the turkey and vegetables with the egg mixture and pour into the baking dish.
  7. Top with 1/4 cup cheese (if using).
  8. Bake for 25-30 minutes, or until the eggs are set and the top is slightly golden.

Makes a great weekend breakfast!
