Ingredients:
- 1 lb. 99% lean ground turkey
- 1 diced Poblano Pepper
- 1/2 cup diced onion
- 2 cups spinach
- 4 whole eggs + 8 egg whites
- 1/4 cup shredded cheese (optional)
- 1/2 cup unsweetened oat milk
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
Instructions:
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Cook the ground turkey in a skillet over medium heat, seasoning with salt and pepper.
- Add the onion and poblano pepper, cooking until softened (about 5 minutes).
- Stir in the spinach until it wilts, then remove from heat.
- In a large bowl, whisk the eggs, egg whites, oat milk, garlic powder, and smoked paprika.
- Combine the turkey and vegetables with the egg mixture and pour into the baking dish.
- Top with 1/4 cup cheese (if using).
- Bake for 25-30 minutes, or until the eggs are set and the top is slightly golden.
