(Makes 12 cookies – 124 calories per cookie, 10 net carbs, 1 g protein, 8 g fat)
7 pitted medjool dates, soaked in warm water for a couple of minutes until soft
In a food processor, add 1 ounce of macadamia nuts and blend until a fine choppy consistency
Next add the dates, add a tiny amount of that warm water if needed to make smooth
Add 1 cup of coconut flakes to the food processor, blend again
Roll mixture into balls, about the size of a small mandarin orange
Place them on a lined baking sheet and then flatten them with a spoon
Poke a small hole in the middle
Pop into the freezer while you melt your chocolate
Use Lily’s Dark chocolate chips (1/2 cup) melted with 1 tsp of butter
Take the sheet out of the freezer and drizzle the melted chocolate over the cookies
Place the cookies back into the freezer for 30 mins
