    High Protein Salad

    Ingredients:

    • 1/2 box Tolerant Brand Red Lentil noodles, cooked and cooled
    • 1 package nitrate-free chopped salami
    • 1 small can (2.25 oz) sliced black olives, drained
    • 1 cup cubed cheddar cheese
    • 1 poblano pepper, diced
    • 1 yellow pepper, diced
    • 1/2 white onion, finely diced

    Dressing:

    • 1/4 cup olive oil
    • 2 tbsp balsamic vinegar
    • 1 tbsp brown mustard
    • 1 tbsp honey
    • 2 tbsp fresh parsley, chopped
    • Salt and pepper to taste

    Instructions:

    Cook the Noodles: Prepare the red lentil noodles according to package instructions. Drain and rinse with cold water. Set aside to cool completely, then chop them in half.

    Prep the Vegetables and Cheese: Dice the poblano pepper, yellow pepper, and onion. Cube the cheddar cheese.

    Mix the Salad: In a large bowl, combine the cooled noodles, chopped salami, sliced black olives, diced peppers, onion, and cubed cheddar cheese.

    Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, brown mustard, honey, chopped parsley, salt, and pepper.

    Combine: Pour the dressing over the salad ingredients and toss until everything is evenly coated.

    Chill and Serve: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
