Dressing ingredients:
2 tablespoons lime juice
1 tablespoon lemon juice
3 teaspoons of olive oil
2 tablespoons of balsamic vinegar
1 tablespoon of coconut aminos
1 small garlic clove, minced
2 tablespoons of local raw honey
Salad ingredients:
2-3 medium cucumbers
1/2 red onion, thinly sliced
1/2 cup of fresh basil leaves, chopped
1/2 cup of fresh cilantro, chopped
1/2 cup of cashews, chopped small
To make:
Prepare the dressing by adding all the dressing ingredients to a small bowl
Combine salad ingredients in large bowl, big enough to toss after the dressing is added. Keep covered in the fridge for 24 hours - serves 4-6 servings.
